e.g. assuming we're talking about gildas that have tuna in them and not gildas that are served alongside tuna, it's gildas de atun, not con atun. Paleta is Iberica or de cerdo iberico. Plantxa, no, maybe in France. Cordero al Chilindron. Callos de Joan sound scary, I hope Joan is doing well without them. And that's just the grammatical stuff before getting to how things would normally be worded, and obvious opportunities for basquisms are missed (Txipis!).
