Duck a l’orange in New York

So did mine last week - served with truffled wild rice. Used D'artagan's mini single serving breast.

Yeah, not too hard to make at home. The secret is an element of bitter orange in the sauce, otherwise it’s sweet and sour duck.

 

I could say you can cheat by using marmalade but the foodie police would confiscate my mandolin.

I tried making the sauce entirely with juice from naranja agria once and had to throw some sugar in. There’s a balance.

The English gloss makes me think it's going to be roast duck served with a side of orange-braised endive. Is that a thing?
