Cardoons

Where would be a good place to look for cardoons? And if it's a stupid question because they're out of season, feel free to let me know.

I saw them at a Wegmans in NJ in the last two weeks.

 

That's where I saw them!  But at the new Wegman's in Brooklyn!

I don't find cardoons listed in your linked recipe.

What I wonder about is your easy access to pulmones.

Si, claro.

 

Pulmones can be found; I think Luis (not Can Lluis) at Essex Market has then; they are definitely available in the Bronx. If I’m lazy, I can get pork stomach (not tripe) up the street.

The Scots will crucify me for even suggesting this, but if you can get pulmones, why not swap them in for sheep lungs in haggis instead of the more obviously unfit substitutes that are used here?

You can get a pig stomach easier than a sheep stomach here. Maybe pig haggis? Piggis?

Isn't there a ban on lungs leaving the slaughterhouse or something? I might be misremembering.
