I'm not talking about strict (or even unstrict) veganism.  I'm talking about a vague popular aversion to meat (or, more accurately, "meat").

1.  I don't think fish is considered "meat".  Look at all the accolades Dame got for having its finger on the pulse of the zeitgeist when it pivoted from its initial plan of being a meat-centered place, a more focused version of Cherry Point, to being a chips shop.

2.  I don't think chicken is considered "meat".  Consider why, in New York at least, fried chicken sandwiches are challenging burgers as the popular Gross Fast-Food (or Mock Fast-Food) Sandwich.

3.  I'm not sure even burgers count as "meat", though.  They're their own category:  more comfortable, less serious, something you can scarf down without thinking about what it is (which in the case of fast-food burgers is a blessing).

4.  Which brings us to the cauliflower.  My complaint isn't that 25% of the main dishes is vegetarian:  I'm all for accommodating vegetarians, actually.  It's that there are only three main dishes aside from the cauliflower -- and one of them's a burger.  And what do you think the margin is on that cauliflower dish, anyway?  Who could go out and pay $26 for cauliflower, chickpeas, rice, garlic, and yoghurt?

It's not that it's 3-4 mains. It's that it's 3-4 dull mains based around a main protein I can both procure and prepare to a similar level at home 

I think sneak and ab are generally correct but I think that victor menu is 2 snacks, 4 apps, 2 salads, and 4 (boring) mains.

Looking at their insta, of the last 9 posts there's Denver steak, raw striploin porn, a 10oz steak, lamb ribs, and chicken (which I agree isn't quite meat) and going further down the feed things get even more meaty, so I'm going to say this isn't a good example for that.

I'm not sure if all that is offered as specials because it's priced too high and would scare people away, but that's what they're marketing.

Well, for Victor at any rate, there's also the point that these 2 guys are well known in the immediate area (both are originals at Buttermilk Channel, one still an owner at BC and French Louie) and draw a following.  And that their specials might be linked to a broader buyer group.

Exactly, and it makes me wonder. I assume Victor is intended to be a neighborhood spot, and traditionally those kinds of places had to change things up to get people to visit regularly (remember daily specials?). But if it's a destination place...well, it's not going to top my list of destinations for fish, and I don't really want the other three entrees.

I didn't really think of Le Crocodile as fancy, but I guess the check was fancy enough. Huge menu.

I posted about specials before I saw this. It's a pity you don't get any sense of this from the website.

Faro. Only three entrees. The appetizers are interesting but the thing to do is order two or three of the ever-changing pastas (or do the pasta tasting (if you eat paste)).

It is fair to say that they don't read like dull entrees.
