A recipe from a French fishmonger's wife has a certain eneffible charm, which I was trying to reproduce. Â Anyway, I called her to ask, and she said, "Pustule! Putain! Putois! . . ." One pair is just enough per person, so dinner for four starts to get a bit pricey. Â In previous seasons, I have bought extra and frozen them for future use.
