I was thinking of doing something like a taramasalata with it.

I've been browsing recipes for taramasalata at home because with the exception of the rare spendthrifty Greek restaurant (and never a Turkish/Middle Eastern one), we never find one light on the oil-thinned potato and heavy on the fish eggs.

I was looking through a couple of Greek cookbooks I have - one by Diane Kochilas is pretty good, but it was hard to scan the recipe.

 

Further looking found this one, which certainly is heavier on the tarama than the potatoes or bread...

The small, excellent Mermaid’s Garden seafood store on Vanderbilt Ave, near me in Prospect Heights, has agreed to get me some roe.

 

I said anything but salmon, for starters, not that I don’t love salmon roe, especially w/ pasta.
