Made the RG recipe for French lentils with cabbage, bacon, and dried morels.  The morels at my local fancy grocery were really expensive, so I used a cheaper mix of other mushrooms.  It came out pretty well; in my opinion, adding the liquid from the mushroom soak makes the dish.

beef braised in barolo wine

green salad

the meat was boneless rib of beef and was marinated in barolo wine along with vegetables, fresh bay leaves and black peppercorns for 24 hours, then browned in lard and butter and braised in the marinade for 2 hours. 

was perfect for keto…or would be if we were still on that diet. i’m afraid we have fallen off the wagon…

Pulled a package of lampchops from the freezer but they turned out to be a strip steak.    -> Viet "barbeque beef" in lettuce cups with noodles, cucumber, cilantro, mint, nuac cham.

Shrove Tuesday pancakes: a savory one with slow-cooked leeks, mushrooms, and smoked salmon, and a dessert one with strawberry and chocolate sauces.  (N had cinnamon sugar and lemon juice on her dessert pancake.)

The Aguja cut of Encina Farms' Iberico pork (part of the pork shoulder, at the end of the loin), pan-seared and served with RG cassoulets, roasted honeynut squash and Asian pears, a pan sauce made from the drippings, the bean cooking liquid, onion, whole-grain mustard, etc.

Impossible Chicken Parm, cole slaw. The parm was good, but the cole slaw! I almost scarfed it up mid-prep, I liked it so much. It’s just cole slaw! You’d think I was altered in some way (I wasn’t).

ETA Okay, now I am. And the cole slaw is gone (hangs head, weeps).
