cinghiale Posted October 17, 2025 Posted October 17, 2025 Staying out on the North Fork this month. The Southold fish market has a terrific variety of locally caught fish, including Northern puffer, aka blowfish. Any cooking suggestions? Googling returned oven-poached in butter at low temperature. Sounds like that might work. Quote
Orik Posted October 18, 2025 Posted October 18, 2025 That should work. Breaded and fried tails are the classic of course. Makes very nice delicate sashimi if it's fresh. Quote
cinghiale Posted October 19, 2025 Author Posted October 19, 2025 Blowfish next week. Tonight LI tautog filets with (farmstand) cherry tomatoes in beurre blanc and side of sauteed (farmstand) carrots. There a crazy number of farmstands out here (along 25/48 and along the “Main Road”). Insane number of vineyards. I passed One Woman a few days ago, whose rustic sign said something like “No tour buses, no parties of more than 6 without advance booking.” My kind of curmudgeon. Found a Grüner Veltliner in the wine shop for $20. Good breweries too. Quote
sourbroughten Posted October 20, 2025 Posted October 20, 2025 Last time i had the One Woman Gruner it sported an edge of fresh green jalapneo on the finish which was truly remarkable. Make sure to get to Channing Daughters if you have not yet. Don't skip the vermouth. Quote

That has become SOP in California at serious tasting rooms. Way too many big vehicles full of mal élevé tourists. Quote
