Supper

Nice the aroma in the apartment after frying ramps.

This was a quick late supper. A supermarket ham steak, shame on me, but topped with green asparagus, itself topped with an egg over easy, then fine sliced ramp bulbs tossed in the pan.

Everything drenched with the melted Beurre de Barrate that has the salt crystals.

After an event in Chelsea at which, among other things, I was introduced to smart vibrators for men and women (they connect to the internet and you can imagine…maybe) I threw together a fast supper.

One last portion of braised tripe I had remembered to thaw. I fried ramps in olive oil, added the tripe, then fiercely reduced the tripe broth. It was really good. Very rampy, the creamy mouthfeel of the broth.

N has been thrilled that our local butcher/fishmonger has been getting a regular supply of sole, so yesterday she bought some filets and sauteed them with butter, wine, and capers. Braised scallions, roasted broccoli, and a sourdough baguette on the side; egg tarts (regular and white) from Yummy Bakery that I got at Friday's Grant Avenue street fest for dessert.

Ramp and asparagus soup with yogurt. It has some nice garnishes, too, but they sank. So much for presentation! I guess I either have to make the soup really thick or make sure it's really shallow. I do not feel like doing either of these things.

I have been eating low carb tortilla chips for many months, I dimly realized recently that I could make nachos. These are threaded with perniz from Dominican restaurant up the street and my fingers now smell of pork fat. Could be worse.

My somewhat disastrous last attempt at pasta, with some red pepper sauce I made and froze a while back, and ricotta from our road trip to Valley Shepherd. I’ll just pretend it looks like this on purpose.

FIrst balcony salad of the season! Little gem, and a dressing made with the tarragon, mint and dill.

Where do you find low-carb chips? Since my meals are often a handful of tortilla chips tossed on a plate with some shredded cheese and nuked, I should make that switch. Only I have not seen them anywhere.

Me and my wife snack on this all the time. We call them (rather hyperbolically) "Microwave Nachos." Admittedly, we know that nachos, they are not.

A bit of schlepping around yesterday led me near Raffetto's.

Where I bought two types of ravioli; a box of classic cheese and a box of "wild" mushroom. Each box of 48 pieces is under $10. So I made a nice marinara sauce (and have a good quart or more left over) using a couple of big cans of Bianco DiNapoli tomatoes, butter, olive oil, onion, carrot, celery and garlic.  Endive alla Romana accompanied.

Some nights just call for a pre-dinner Martini, and while the vermouth made it into the drink, it did not make it into the picture. Nor did the orange bitters or lemon twists.

Reverse seared strip steak topped with mushroom and pan sauce.  Chive mashed Yukon golds.  Roasted broccolini. And a dab of Pickle Guys' horseradish.

To drink. Pre sell-off by Merry.
