We've had 2 bags of Anson Mills Carolina Gold rice hanging out in the freezer for nearly a year, so I used that for the rice part. The recipe on the Anson Mills website is a bit fussy--you cook the rice for 15 minutes, rinse it off, then bake it in the oven at 300 degrees for another 10 minutes--but the rice came out well. I'm looking forward to using it in jambalaya. Quote

My wife, Queens-Italian-American to her essentials, expressed a desire for these orbs of happiness a few months ago. I read my Hazan and produced some. They passed muster. My mistake was that I mentioned to her family in a group chat that my wife craved meatballs. In October, when we hosted a "cousins dinner" at our Hell's Kitchen digs, cousin after cousin slipped me containers of meatballs (4 dozen from one) with a knowing wink and a secretive whisper, "I know she wants them." Ham, potatoes, mushrooms, carrots, celery, leeks, onions, shallots, tomatoes, green chili. Salad. Little gems, cucumbers, almost decent winter tiny tomatoes.. House-made blue cheese dressing. Jamón serrano (Formaggio Essex) on focaccia (Pain d'Avignon). Happy spouse. 2 Quote

I saw a pack of cured salt pork in the supermarket, so why not petit salé aux lentilles? The pork soaked overnight. Lentils cooked in chicken stock with carrots then finished with red wine (they drank it, you can't see it) and previously sauteed shallots. I crisped slices of the pork in the shallot oil. Really good and actually didn't need mustard. 1 Quote
