Some of the flavor buddies for beets include: Spices: allspice, cloves, curry, ginger, nutmeg, paprika Herbs: chives, dill, fennel, tarragon, parsley Fruit: apples, lemon, oranges Veg: cucumber, horseradish, mache, onions, potatoes, shallots, watercress Meat/fish: anchovies, bacon, proscuitto, salt pork, smoked fish Misc.: bechamel, brown sugar,butter, cheese, cream, creme fraiche, eggs, vinegar (balsamic, sherry, white wine), walnuts, walnut oil The misc. section suggests some ideas for desserts for those who really, really love beets. Beet tart, beet flan, pink cheesecake, etc. I made a beet cheesecake once, based on a recipe for carrot cheesecake. The color was – to be kind – lurid. But it was delicious. Our Farmers Market started up this week and I couldn't be happier for spring vegetables having arrived. Don't know why but lately I've been craving anchovies and beets in everything. Bucatini pasta with anchovy and garlic...caesar salad with anchovies...and this...a super yummy Beet Salad tossed in Anchovy Dressing.
