Evelyn Posted April 12, 2024 Posted April 12, 2024 I just received an order from the East Coast of what were supposed to be frozen Jimmy's Seafood crabcakes. They were supposed to arrive yesterday. Instead, they arrived today at about 6 pm-completely ompletely thawed. My FedEx driver is notorious for calling it a day at 6 pm. So, they've been traveling around LV in his truck in 80+ weather. I tested their temps. The coldest registered 45 degrees on my Thermoworks thermometer. Most were between 48-51 degrees. I put them in the freezer and emailed the sender to ask for a replacement. If they won't replace the order, would you toss them? That's my current thought, because I am pretty sure they use mayonnaise in the recipe. Quote

At the memory care where my husband is, they leave the mayo on the tables in the dining room all the time. I was horrified at first, but they have regular inspections, so am sure it is acceptable or it wouldn't be happening. Quote

That is true of mayo on its own (and yes nothing is going to happen if you leave it out, as evidenced by all of Mexico) but once you mix mayo with high moisture items (even just water) it's going to be a real microbial party. 1 1 Quote
