Leftover apples

I've got a bowl of apples sitting on my counter that are getting VERY ripe. They were gifted to me, so I am unsure of the type, but I would put them in between Granny Smiths and Golden Delicious in terms of texture and tartness.

 

Are these too soft to make a pie? What else can I do before they are over the hill?

You could probably bake them, as in baked apples I mean. Or how about poulet Normande, using sliced apples,cream and Calvados ?

 

Or make applesauce. If the apples are organic you don't even have to peel them. Chunk up the apples, add a pinch of salt, barely cover with water and cook until it's applesauce. I like to add grated horseradish and serve with pork chops or roast pork or sausages. I never add sugar to applesauce, but some do. A pinch of nutmeg is nice as well.

If they get ripened beyond even the apple sauce stage, try making apple butter.
