My happiest memory of sweet potatoes was the year I could not use any dairy products, and so instead mixed in coconut milk and chopped sweet/salty/sour preserved lemons from Aji Ichiban (the Japanese junk food store). Of course, I was starting out with farmers' market sweet potatoes, the caramelized juices of which I mixed back in.


Why on earth does anyone boil the sweet potatoes before mashing them? It don't make no sense to me.
