Why?

Among other things, it was never clear to me whether you could overcook a braise.

IMHO, only (or particularly) if your meat was too lean to start with.

Based on my grandmother's cooking....absolutely yes.

Yeah my mother too.  But I attributed that to her almost magical ability to overcook ANYTHING and didn’t think it had universal applicability.
