The one near our house in NJ carries a variety of cuts including for stewing. Is there a more fun place to explore a bunch of esoteric wines than Chambers? I'd say Foxface but the wine selection is understandably broader here. Went Saturday night and place was full until after 11PM. Service was on point and I was able to drink 4 very delicious and very different wines. A number of the glasses poured were not on the BTG list. Food was excellent as well. Not a cheap place but impressive. Glad you were able to go there and were able to find the veal you wanted. You are right that the variety of meats they carry is more extensive than other supermarkets in my area. For example, they’re the only place that carries hangar steak, in addition to skirt steak which is ubiquitous; and domestic lamb rib chops, in addition to the imported ones from New Zealand more commonly sold.
