Roasted five ears of real Jersey white corn, procured earlier in the day at the greenmarket. I'd never done this in the countertop oven; came out great.

Buttered, served with a Greek salad, with greenmarket tomatoes, lettuce, cukes. Olives are hiding under it all.

Sometimes this is all we need in the heat (I did eat two ears of corn).

Amatriciana Estiva,  a more summery, lighter version of the classic bucatini all'Amatriciana.  Main difference is the use of fresh tomatoes (cherry, or as in this case, Lancaster Farms' organic garden gem tomatoes), and (hide your eyes, @Sneakeater) draining off a bit of the rendered fat from the guanciale.  The pasta used is Setaro's Mezze Rigatoni.

RG Borlotti Lamon beans in a homemade tomato & pepper sauce over polenta. The recipe calls for sauteeing 2 oz. of prosciutto along with parsley until brown, about 10 minutes, before adding it to the cooked beans. Doing this to prosciutto makes the dish taste very porky IMO.

A friend dropped off some wonderful chili lime chicken skewers while I was visiting my husband. I popped them into the oven for a quick roast before it got too hot. Froze some for later and ate some tonight with arugula, sliced tomato, avocado lime dressing and buttered baguette.

 

And as long as I had the oven on, put in the shriveling cherry tomatoes I had and a huge green pepper to roast for freezing to use in whatever.

I have been patiently growing tomatoes and cucumbers and peppers for approximately 1000 years now, waiting for the day when I reach critical gazpacho mass. That day has come. Seen here adjacent to shrimp & egg salad with balcony tarragon. This is a pretty damn good hot weather dinner.

Pork scallopini (or piccata, whichever you prefer; there are 3 or 4 thin slices of pork under the lemon, butter, white wine, capers, and garlic sauce).  Roasted baby potatoes and cabbage wedges.  A pretty tasty, quick and easy dinner.

Made up a soup with some of the chicken from the skewers I roasted the other day. Used a packaged cilantro lime rice, some chopped tomato, chicken stock and a dollop of jalapeno something from Trader Joe's that's been lurking in the fridge for a long time.

 

I have to admit that I am really getting hungry for "real" food, i.e., meat to eat with a knife/fork, veggies and a nice glass of wine. My dear friend who always beings me food texted me yesterday and asked me what I'd like to cheer me up and he'd make it for me. I politely declined. I was afraid it would be chicken drumsticks. LOL.

Our garden yielded a zucchini large enough to stuff, so N made a ground lamb and pine nut filling, put some of it into the zucchini and baked it, and cooked down the rest to serve on the side.  She also made hummus with RG chickpeas as a side, with lavash for dipping (bought locally).  Pistachio baklava for dessert.

 salmon and ikura rice (japanese rice cooked with konbu and salmon, topped with ikura and scallions); miso shiru with tokyo turnips and turnip greens; tomato no nimono (peeled early girl tomatoes simmered in dashi, shoyu, and hon mirin, then chilled); cucumber and wakame seaweed salad with sesame vinaigrette; turnip asazuke (quick pickled turnips with konbu, salt and sugar). and for dessert, peaches and blueberries with a little lemon juice and a pinch of splenda.
